  1. Prepare the Sugar Syrup:

    • In a saucepan, combine sugar and water. Bring to a boil, stirring until the sugar is dissolved.
    • Add cardamom powder and saffron strands (if using).
    • Let it simmer for a few minutes until it reaches a slightly sticky consistency.
    • Add a few drops of lemon juice to prevent crystallization. Keep the syrup warm.
  2. Make the Malpua Batter:

    • In a mixing bowl, combine all-purpose flour, semolina, sugar, mashed banana, cardamom powder, and saffron strands (if using).
    • Gradually add milk and mix until you get a smooth batter. The consistency should be similar to pancake batter.
    • Let the batter rest for about 15-20 minutes.
    • Gently fold in European Corinthian black raisins into the batter.
  3. Fry the Malpuas:

    • Heat oil or ghee in a shallow frying pan over medium heat.
