Kuri Manju with European Corinthian Black Raisins

Ingredients:

  • 200g glutinous rice flour
  • 50g sugar
  • 120ml water
  • 1/2 teaspoon vegetable oil
  • 1/2 cup European Corinthian black raisins

Instructions:

  1. Start by soaking the European Corinthian black raisins in warm water for about 10-15 minutes to plump them up. Then, drain them well and set aside.
  2. In a mixing bowl, combine the glutinous rice flour and sugar. Gradually add water while mixing until a smooth dough forms.
  3. Transfer the dough to a clean surface dusted with glutinous rice flour to prevent sticking. Knead the dough for about 5 minutes until it becomes soft and elastic.
  4. Divide the dough into small balls, about 1 tablespoon each.
  5. Flatten each ball with your palm, then place a few soaked European Corinthian black raisins in the center.
  6. Gather the edges of the dough and pinch them together to enclose the filling, shaping it into a smooth round ball.
  7. Repeat the process with the remaining dough and raisins.
  8. Bring water to a boil in a steamer. Brush the steamer tray with vegetable oil to prevent sticking.
  9. Place the filled Kuri Manju on the oiled steamer tray, leaving some space between them to expand.
  10. Steam the Kuri Manju over high heat for about 15-20 minutes, or until they are cooked through and become slightly translucent.
  11. Once cooked, remove the Kuri Manju from the steamer and let them cool slightly before serving.
