Raisin and Apple Crisp with European Corinthian black raisins

Ingredients:

For the Filling:

  • 4 large apples, peeled, cored, and thinly sliced
  • 1 cup European Corinthian black raisins
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • Zest of 1 lemon 

For the Crisp Topping:

  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish or a similar-sized ovenproof dish.

  2. In a large mixing bowl, combine the sliced apples, Corinthian black raisins, granulated sugar, flour, cinnamon, nutmeg, lemon juice, and lemon zest. Toss until the apples and raisins are evenly coated with the sugar and spices.

  3. Transfer the apple and raisin mixture to the prepared baking dish, spreading it out evenly.

  4. In another mixing bowl, prepare the crisp topping. Combine the rolled oats, flour, brown sugar, and salt. Add the cold cubed butter and use your fingers or a pastry cutter to incorporate the butter into the dry ingredients until the mixture resembles coarse crumbs.

  5. Sprinkle the crisp topping evenly over the apple and raisin mixture in the baking dish.

  6. Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the filling is bubbly, and the topping is golden brown and crisp.

  7. Remove the crisp from the oven and let it cool for a few minutes before serving.

  8. Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
