- 250g dried Chinese wheat noodles
- 2 tablespoons sesame oil
- 2 cloves garlic, minced
- 200g ground pork
- 2 tablespoons soy sauce
- 1 tablespoon black vinegar
- 1 tablespoon chili oil (adjust to taste)
- 1 tablespoon Sichuan peppercorns, toasted and ground
- 1/4 cup European Corinthian black raisins
- 2 green onions, thinly sliced
- Crushed peanuts or sesame seeds for garnish (optional)
Instructions:

Cook the noodles according to the package instructions until al dente. Drain and set aside.

In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

Add the ground pork to the skillet and cook until browned and cooked through, breaking it up with a spoon as it cooks.

Once the pork is cooked, add the soy sauce, black vinegar, chili oil, and ground Sichuan peppercorns to the skillet. Stir well to combine.

Add the cooked noodles to the skillet and toss to coat them evenly with the sauce.

Stir in the European Corinthian black raisins and sliced green onions, reserving some for garnish if desired. Cook for an additional 1-2 minutes until everything is heated through.
