Ingredients:
- 1 cup of rice
 - 2 cups of water
 - 1/2 cup of cashews
 - 1/4 cup of European Corinthian black raisins
 - Salt to taste
 - 1 tablespoon of olive oil or butter
 
Instructions:
- Rinse the rice under cold water until the water runs clear. Drain well.
 - In a pot, bring the 2 cups of water to a boil. Once boiling, add the rinsed rice and a pinch of salt. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the water is absorbed.
 - While the rice is cooking, heat the olive oil or butter in a pan over medium heat. Add the cashews and sauté until they are lightly golden brown, stirring occasionally.
 - Once the rice is cooked, fluff it with a fork and transfer it to a serving bowl.
 - Add the sautéed cashews and European Corinthian black raisins to the rice, and gently toss to combine.
 - Adjust seasoning with salt if necessary.
