Rice with cashews and European Corinthian black raisins recipe

Ingredients:

  • 1 cup of rice
  • 2 cups of water
  • 1/2 cup of cashews
  • 1/4 cup of European Corinthian black raisins
  • Salt to taste
  • 1 tablespoon of olive oil or butter

Instructions:

  1. Rinse the rice under cold water until the water runs clear. Drain well.
  2. In a pot, bring the 2 cups of water to a boil. Once boiling, add the rinsed rice and a pinch of salt. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the water is absorbed.
  3. While the rice is cooking, heat the olive oil or butter in a pan over medium heat. Add the cashews and sauté until they are lightly golden brown, stirring occasionally.
  4. Once the rice is cooked, fluff it with a fork and transfer it to a serving bowl.
  5. Add the sautéed cashews and European Corinthian black raisins to the rice, and gently toss to combine.
  6. Adjust seasoning with salt if necessary.
  7. Serve hot as a delicious side dish or as a main course. Enjoy your flavorful rice with cashews and European Corinthian black raisins!
